脐橙脱囊衣技术研究进展

Research Progress in Techniques for Taking off Navel Oranges Segment Membrane

我国作为农业大国,脐橙资源丰富.随着脐橙资源的不断开发利用,脐橙加工制品越来越受到人们的喜爱.在脐橙生产加工过程中,脱囊衣是影响产品质量和生产效率的关键环节.本文综述了传统酸碱脱囊衣和酶法脱囊衣技术的研究进展,对比了两种方法的优缺点,为今后的研究方向和趋势提供参考.

As a big agricultural country, China is rich in orange resources. With the improvement of people＇s living standard, the products of deep treatment of our navel oranges has been becoming more and more popular among consumers from home and abroad. Taking off segment membrane has become the key in deep processing of navel orange. In this article, traditional acid-bases citrous peeling method and enzymic method has been introduced, the comparison of each method was also studied. Finally, concludes the further research direction and future prospect.
