摘要
本研究对潍县萝卜茎叶和肉质根的主要营养成分(氨基酸组分、矿质元素、蛋白质、总糖、粗脂肪等)和功效成分(亚麻脑苷脂、黄酮等)进行测定分析。结果表明:萝卜茎叶中蛋白质、总糖、粗脂肪、矿质元素以及多数氨基酸组分的含量均高于肉质根;茎叶中的钙、总黄酮、亚麻脑苷脂含量分别为肉质根的53.4倍、6.7倍和1.5倍。
The main nutritional components,amino acid composition,mineral elements,protein,total sugar,and crude fat,and active components,flax cerebrosides and flavonoids,in cauline leaves and fleshy root of Weixian radish were determined and analyzed in this paper.The results showed that the contents of protein, total sugar,crude fat,mineral elements and most amino acid compositions in cauline leaves were higher than those in fleshy root.The contents of calcium,total flavonoids and flax cerebrosides in cauline leaves were 53.4,6.7 and 1.5 times of those in fleshy root respectively.
