摘要
研究了采用高压热水浸提法从金针菇中提取游离氨基酸的最适条件。通过单因素试验和正交试验,探讨了料液比、高压热水浸提时间及高压热水浸提温度对金针菇中游离氨基酸提取率的影响。试验结果表明,此法提取金针菇中游离氨基酸的最适条件为:料液比为1∶35(g/m L)、高压热水浸提温度为108℃、高压热水浸提时间为50min。在此条件下,金针菇中游离氨基酸的提取率为3.37%。
The optimal conditions of high-pressure hot water extraction of free amino acids from Flammulina velutiper were stud- ied. Through the single factor and orthogonal experiments, the influences of solid-liquid ratio, high-pressure hot water extraction time and extraction temperature on the extraction rate of free amino acids were discussed. The experimental results showed that the optimum condition was: the solid-liquid ratio ! :35 (g/mL), high pressure hot water extraction temperature 108℃, high-pressure hot water extraction time 50min. Under this condition, the extraction rate of free amino acids was 3. 37%.
