Study on Amino Acid Composition and Antioxidant Activities of Deer Blood Oligopeptides

摘要 利用GB/T 5009.124—2003方法测定鹿血低聚肽的氨基酸组成,通过AAS和CS评价了鹿血低聚肽营养价值,并对其氨基酸组成与抗氧化活性的关系进行初步分析。结果显示,鹿血低聚肽总氨基酸含量达到74.49%,其中必需氨基酸含量为36.87%,EAA/TAA值为49.5%,EAA/NEAA值为98%;AAS和CS均较高,第一限制性氨基酸为色氨酸,除色氨酸外其他必需氨基酸含量都高于WHO/FAO推荐值,均能满足人体需要。鹿血低聚肽中与抗氧化活性相关的氨基酸占总量的30.8%,与鹿血低聚肽的抗氧化活性一致。 GB/T 5009.124-2003 method was used to determine the amino acid composition of deer blood oligopeptides. Through the calculation of AAS and CS, the nutritional values of deer blood oligopeptides were evaluated and the relation between antioxidant activities and amino acid composition of deer blood oligopeptides was analyzed. The results showed that the total amino acid content of the deer blood oligopeptides reached 74.49%, the essential amino acids content was 36.87%, EAA/TAA was 49.5%, and EAA/NEAA was 98%; AAS and CS were higher. The first limited amino acid was tryptophan, and other essential amino acid contents except tryptophan were higher than the recommended value of WHO/FAO which could meet the need of human. The total antioxidant activity amino acids of deer blood oligopeptides were 30.8%, which was consistent with the antioxidant activities.
