活性炭对鲶鱼鱼皮酶解胶液脱腥条件的优化 被引量:1

摘要 以脱脂鲶鱼鱼皮酶解胶液为研究对象,蛋白质损失率和感官评价值为判定指标,优化活性炭对胶液腥味的脱除条件;在单因素试验的基础上,通过正交试验确定活性炭对脱脂鲶鱼鱼皮胶液脱腥的最佳工艺条件.结果表明:在活性炭添加量0.7%、温度75℃、p H 6.0、时间50 min的最佳处理条件下对胶液脱腥,蛋白质损失率为9.44%,感官评价值为8,说明此条件在保证较低的蛋白质损失率下,实现了脱腥的目的,提高了胶液的使用价值. The optimal conditions for the deodorization of defatted catfish skin with activated carbon were investigated with protein loss rate and sensory evaluation as evaluation indexes. On the basis of single factor experiment,the optimum processing conditions were confirmed through orthogonal test,which were as following: activated carbon content 0.7%,temperature 75 ℃,p H 6.0,time50 min. After deodorizating glue soluting under the optimal conditions,the protein loss ratio was 9.44% and the sensory evaluation was 8. According to the optimal conditions,the fishy smell of catfish skin was removed at some level,and the application value of enzymatic hydrolysate was increased significantly.
