摘要
以南极磷虾为研究对象,分析了南极磷虾在4℃和20℃条件下自溶过程中非蛋白氮(NPN)、TCA可溶性蛋白、氨基酸态氮、总挥发性盐基氮(TVB-N)等蛋白质组分的变化情况。结果表明,南极磷虾NPN含量随着时间的延长而增加,8 h后4℃和20℃试验组NPN含量分别为8.40和12.67 mg/g,分别占到总氮的33.12%和49.96%;TCA可溶性蛋白的变化规律与NPN基本一致,而氨基酸态氮含量显著偏低;TVB-N值同样随着时间延长而增加,8 h后4℃和20℃试验组TVB-N含量分别为0.16和0.21 mg/g。在实际生产中,南极磷虾原料应尽量避免高温条件下长时间贮存。
The changes in non-protein nitrogen(NPN), TCA soluble protein, amino acid nitrogen and total volatile basic nitrogen(TVB-N) of antarctic krill during the 4℃ and 20℃ storage were analyzed in this study. The results showed that the NPN contents of the 4℃ and 20℃ groups increased with the extension of time, and reached 8.40 mg/g and 12.67 mg/g, which accounted for 33.12% and 49.96% of the total nitrogen, 8 h after the storage, respectively. The changes in the TCA soluble protein and amino acid nitrogen were similar to that of the NPN. However, the contents of amino acid nitrogen were signifi cantly lower than those of TCA soluble protein. The TVB-N value also increased with the time to 0.16 mg/g and 0.21 mg/g 8 h after the storage at 4℃ and 20℃,respectively. In production, antarctic krill raw materials should be kept fresh to avoid long-time storage at high temperature.
