摘要
明朝末年,辣椒传入我国;清朝中后期,辣椒传至甘肃;直到民国时期,辣椒在甘肃才普遍种植开来。由于兼具蔬菜与调味品的特性,辣椒完全融入甘肃人民的日常饮食生活中,不仅成为诸多甘肃特色名吃的重要原料,丰富了人们的饮食文化生活,同时也缔造出甘肃人民喜好食辣的“辣椒文化”。
Pepper was introduced into China since the late Ming Dynasty, then spread to Gansu province in Middle and Later period of the Qing Dynasty. It was widely cultivated in the whole province in the period of the Republic of China. Due to the characteristics of both vegetables and spices, pepper is fully integrated into the Gansu people' s daily diet. Pepper is not only an important raw material of many Gansu cuisines, enriching people' s cultural life of diet, but also created the "pepper culture" that Gansu people like eating spicy food.
