枸杞色素微胶囊的制备 被引量:9

摘要 随着人们对食品安全和饮食健康的重视,兼有营养和保健功能的天然食用色素越来越受到欢迎。枸杞色素具有增强免疫力、抗氧化、抗肿瘤、防衰老、保肝护目等功效,由于枸杞色素含有许多不饱和双键,光、热、pH、氧化剂、金属离子等对其稳定性影响较大,限制其应用。利用海藻酸钠和壳聚糖为壁材,枸杞色素为芯材,制备枸杞色素微胶囊。在分析壳聚糖浓度、海藻酸钠浓度、壁芯质量比、氯化钙浓度和固化时间的单因素试验基础上,以枸杞色素包埋率为优化目标,采用正交试验优化枸杞色素微胶囊的制备参数。结果表明枸杞色素微胶囊的最佳制备参数为壳聚糖浓度8 mg/m L、海藻酸钠浓度60 mg/m L、壁芯质量比3:1、氯化钙浓度10mg/m L、固化时间5 min,此条件下枸杞色素包埋率平均值为81.36%。 As people's emphasis on food safety and healthy diet, natural edible pigments with nutrition and health functions are more and more popular. Wolfberry pigments have the effects of enhancement immunity, antioxidation, antitumor, anti-aging, and liver and eye protection, but light, heat, pH, antioxidant and metal ions have great effects on the pigments' stability due to many unsaturated double bonds of the pigments, and consequently limit their applications. In this paper, sodium alginate and chitosan were used as wall material and wolfberry pigments were use as core material to prepare wolfberry pigment microcapsules. Basing on the analysis for single-factor-test of chitosan concentration, alginate concentration, wall to core mass ratio, calcium chloride concentration and curing time, the orthogonal test was used to optimize the preparation parameters of wolfberry pigment microcapsules for the optimization goal of pigment embedding ratio. The results showed that the optimal preparation parameters of wolfberry pigment microcapsules were chitosan concentration of 8 mg/m L, alginate concentration of 60 mg/m L, wall to core mass ratio of 3:1, calcium chloride concentration of 10 mg/m L, and curing time of 5 min, under which the pigment embedding ratio was 81.36%.
