摘要
以去离子水为溶剂,抗坏血酸和碱式碳酸锌为主要原料,分别在微波辐射和常规条件下合成食品添加剂抗坏血酸锌,并利用红外光谱(IR)、元素分析(EA)、EDTA配位法、热重分析(TG)对目标产物进行了结构分析。通过单因素实验对反应温度、反应时间、配料比n(碱式碳酸锌)∶n(抗坏血酸)、去离子水量、辐射功率等影响因素进行。结果表明,常规工艺条件为:反应温度60℃、配料比0.14∶1、反应时间35 min、去离子水量约为20 m L,抗坏血酸锌产率接近80%;微波工艺条件为:反应温度60℃、配料比0.14∶1、反应时间35 min、去离子水量约为20 m L、辐射功率300 W,抗坏血酸锌产率可达90.64%。在相同条件下,微波反应耗时短,产率高。
Using deionized water as solvent, ascorbic acid and basic zinc carbonate as the main raw materials, zinc ascorbate was synthesized under the condition of microwave radiation and conventional food additives, respectively, and the structure of target product was analyzed by using infrared spectrum ( IR ) , elemental analysis ( EA ) , EDTA coordination method and thermogravimetric analysis ( TG) , by single factor experiment, such as the reaction temperature, reaction time, n( basic zinc carbonate) :n( ascorbic acid) , and the radiated power of the ions. Results showed that the conventional process conditions were as follows: reaction temperature was 60 ℃, n ( basic zinc carbonate ):n ( ascorbic acid) was 0. 14:1, reaction time was 35 min, with about 20 mL deionized water, zinc ascorbate production rate was close to 80%. Microwave technology conditions were as follows:reaction temperature was 60℃, n( basic zinc carbonate):n(ascorbic acid) was 0. 14:1, the reaction time was 35 min, with about 20 mL deionized water, radiation power was 300 W, zinc ascorbate production rate can reach 90. 64%. Under the same conditions, the microwave reaction time was shorter with higher production rate.
