摘要
目的了解青岛市市售食品中铅、镉、汞、砷重金属元素的污染情况。方法对该市区的超市及零售批发农贸市场按照随机原则采集各类食品12种,共计采集319份,测定重金属含量。结果铅、镉、汞、砷的总检出率分别为28.8%、59.2%、91.5%、39.8%。仅有小麦面粉镉超标1份,检出值为0.164 mg/kg,超标0.6倍。其他样品所检项目均符合食品中污染物限值。但水产品、禽畜内脏中铅平均值分别为0.0934和0.0473 mg/kg,镉平均值分别为0.477和0.0550 mg/kg;水产品中总汞和砷平均值分别为0.0114和2.27 mg/kg,皮蛋咸蛋总砷平均值为0.141 mg/kg。结论青岛市食品中铅、镉、汞、砷重金属污染总体较轻。
[ Objective ] To investigate the pollution situation of heavy metals, such as lead, cadmium, mercury and arsenic, in commercially available food of Qingdao City. [Methods ] 12 kinds of food were randomly sampled from local supermarkets and farmersj markets, and a total of 319 samples were collected, to detect the contents of the heavy metals. [Results] The total detection rates of lead, cadmium, mercury and arsenic was 28.8%, 59.2%, 91.5% and 39.8%, respectively. In all of samples, there was only one unqualified sample of wheat flour, with cadmium content of 0.164 mg/kg, which was higher than the standard by 60%. The contents of heavy metals in other samples were lower than the pollutants limits in food. However, the average content of lead in aquatic products and poultry offal was 0.093 4 mg/kg and 0.047 3 mg/kg respectively, while the average content of cadmium was 0.477 mg/kg and 0.055 0 mg/kg respectively. The average content of total mercury and arsenic in aquatic products was 0.011 4 mg/kg and 2.27 mg/kg respectively, and the average content of total arsenic in the preserved egg and sahed egg was 0.141 mg/kg. [ Conclusion ] In Qingdao City, the pollution of heavy metals in food, such as lead, cadmium, mercury and arsenic, is not serious.
