开封市水产品养殖、销售和加工过程中致病性弧菌的污染状况

Study on contamination status of pathogenic Vibrio in breeding, sales and processing of aquatic products in Kaifeng City

目的了解开封市水产品养殖、销售和加工过程中弧菌的污染状况。方法从开封市养殖场、销售场所和餐饮店采集相关水体、水体沉积物、水产品共216份样品,用3%碱性蛋白胨水增菌,用3%TSA琼脂和科玛嘉弧菌显色琼脂进行分离,对分离出的致病性弧菌进行全自动系统生化鉴定,对检出的霍乱弧菌进行血清学分型。结果共检出弧菌7种269株,检出率依次为溶藻弧菌47.69%,霍乱弧菌34.26%,副溶血弧菌24.54%,创伤弧菌7.87%,河流弧菌6.94%,最小弧菌1.85%,麦氏弧菌1.39%;其中分离出的霍乱弧菌均为非01/非0139群霍乱弧菌。结论开封市淡水鱼养殖过程和市售水产品致病性弧菌污染较为严重,存在一定的食品安全风险,需加强水产养殖与市售水产品的监测,做好疾病的预防控制工作。

To understand the Vibrio contamination status in breeding, sales and processing of aquatic products in Kaifeng City. [Methods] A total of 216 samples, including related water, sediment, aquatic products, were collected from aquafarm, markets and restaurants. Samples were proliferated in 3% alkaline peptone water, and purified in 3% TSA agar and ehromager vibriocolored agar. The biochemical identification of the isolated strains was performed by automatic bacterial identification instrument. The isolated Vibrio cholerae were analyzed by serotyping. [ Results ] 269 strains of 7 kinds of Vibrio were isolated, and the detection rate of Vibrio alginolyticus, Vibrio cholerae, Vibrio parahaemolyticus, Vibrio vulnificus, Vibrio fluvialis, Vibrio mimicus and Vibrio metschnikovi was 47.69%, 34.26%, 24.54%, 7.87%, 6.94%, 1.85% and 1.39%, respectively. None of Vibrio cholerae isolates were proved to be Vibrio cholerae O1 or O139. [Conclusion] The pathogenic Vibrio contamination is serious in freshwater fish breeding and commercially available aquatic products in Kaifeng City, which indicates there exists food safety risk. It is important to strengthen the monitoring of aquaculture and aquatic product, and improve the disease prevention and control.
