菊芋中菊糖的提取工艺研究 被引量:2

摘要 菊芋中的菊糖是一种天然功能性食用多糖,有多种保健功能,具有超强增殖人体双歧杆菌的作用。菊糖可以从菊芋中大量提取,因其具有多种功能,越来越受到人们的关注,成为近年来国际上热门的功能性食品,因此菊糖的开发利用受到国内外的高度重视,拥有广阔的发展前景。选择料液比、提取时间、提取温度、提取次数进行单因素试验,确定提取条件范围,再用正交试验优化提取条件,得到菊糖的最佳提取工艺条件为料液比1∶20,提取时间90 min,提取温度75℃,提取次数1次,在此条件下菊糖提取率最高,可达98.1%。 In Jerusalem artichoke inulin is a kind of functional natural edible polysaccharide has various health care functions, with super proliferation of Bifidobacterium in human body. Inulin from Jerusalem artichoke tubers form because of its multiple functions, people have paid more and more attention. In recent years, lnalin has become the most popular functional foods, so development of inulin using to receive the attention at home and abroad has broad development prospects. The extraction conditions are determined by choosing the ratio of material to liquid, extracting time, extracting temperature and extracting the temperature, extracting the degree of the extraction conditions, and extracting the conditions by orthogonal experiment. The best extraction conditions of the extract are 1 : 20, the extraction time is 90 min, the extraction temperature is 75 ℃, the extraction one time, the extraction rate is the highest, and the extraction rate is 95.1%.
