发芽谷物的开发利用正在引起国内外的广泛关注,成为研究热点。谷物发芽能提高谷物的营养价值,促进功能成分富集,降低或消除有害物质或抗营养物质,改善谷物产品风味及感官品质。开发萌动谷物食品对于增进饮食健康,促进食品加工产业发展具有重要价值。
Grain germination now appeals great interest all around the world and becomes the focus in cereal processing fields. Germinating can increase its nutrient value and collect functional components of cereals. Moreover, it will reduce evenly eliminate harmful or anti-nutrient materials. Furthermore, germinating tend to improve flavor and sensory quality of grains and products. Therefore, developing germinating grains has the important meaning for improving living standard and promoting food industrial.
