2012年四川省攀枝花市食品中重要食源性致病菌污染监测 被引量:1

Surveillance and Analysis of Contamination Status of Important Foodborne Pathogen in Panzhuhua City in 2012

摘要 目的了解四川省攀枝花市主要食品中单核细胞增生性李斯特菌、大肠杆菌O157、沙门菌、志贺菌、金黄色葡萄球菌、蜡样芽孢杆菌、阪崎肠杆菌等7种重要食源性致病菌的污染状况,为食品安全风险评估和预防食源性疾病提供科学依据。方法 2012年在全市5个区县抽查熟肉制品、果蔬类、烤焙制品、凉拌菜、调味酱、蛋制品、婴幼儿食品、熟制米面制品8类食物样品共366份,依据国标法进行检测,运用API卡和VTEK2 COMPACT全自动细菌鉴定仪对样品进行病原菌鉴定。结果从366份样品中共检出38株食源性致病菌,总检出率为10.4%,其中金黄色葡萄球菌18株,检出率5.4%;蜡样芽胞杆菌18株,检出率15.7%;单核细胞增生性李斯特菌2株,检出率0.9%。8类食品中病原菌阳性率最高的是熟制米面制品(33.3%),其次为肉制品(9%),第三为烤焙制品(3%)。结论 2012年攀枝花地区居民主要消费食品中存在着较为严重的食源性致病菌的污染,其中熟制米面制品是主要的污染食品。 Objective To understand the contamination status of important foodborne pathogenic bacteria in main food in Panzhihua city and toprovide scientific basis for prevention of foodborne disease and security risk assessment of food safety. Methods In all,366 food samples of 8 kinds were spot tested in 5 districts / counties,including cooked meat products,garden stuffs,bake products,cold vegetable dishes,bechamel,egg products,infant foods and cooked rice / flour products. According to Chinese standards,AP I CARD and VTEK2 COMP ACT automatic bacteria detection machine were used to detect the pathogenic bacteria in the samples. Results Altogether 38 food- borne pathogenic bacteria were detected from 366 samples,the overall detection rate was 10. 4 %. Among them,18 staphylococcus aureus were detected( 5. 4 %),18 bacillus cereus were detected( 15. 7 %),2 mononuclear cell proliferative listeria were detected( 0. 9 %). The positive rate of cooked rice / flour products was the highest among the 8 kinds of foods( 33. 3 %),the second was cooked meat products( 9 %) and the third was bake products( 3 %). Conclusion The contamination status of food- borne pathogenic bacteria is relatively severe in the main food of P anzhihua. Cooked rice / flour products are the main contaminated foods.
