Efffect of Different Feeding Modes on Muscle Fiber Characteristics and Meat Quality of Houdan Chicken

试验旨在研究不同养殖模式对贵妃鸡肌纤维特性和肉品质的影响,为贵妃鸡的肉质评定标准体系提供理论基础。试验随机抽取林下草地散养、户外放养和笼养模式下的120日龄贵妃鸡各30只,分别取其胸肌做切片,测定三种类型贵妃鸡的肌肉组织学特性、物理性状、主要化学成分,采用DPS软件进行单重方差数据分析,对三种类型鸡肉的肌纤维特性和肉质进行比较。结果表明,林下散养的贵妃鸡肌肉纤维特性和肉品质最好。

The study was to investigate the effect of different feeding modes on muscle fit）er characteristics and meat quality of Houdan chicken so as to provide the scientific basis of the evaluation standard of meat quality. In order to find out the differences of muscle fiber capability and meat quality of Houdan chickens in wood land,free range and caged modes,the muscle fiber characteristics, physical properties and chemical compositions were measured with the random sample of 30 Houdan chickens respectively in these three different modes.The Data Processing System was used to analyze the variances and the comparisons of muscle fiber characteristics and meat quality. The results showed that the muscle fiber quality and meat quality of houdan chickens in wood land mode were better than the other two modes.
