摘要
文章分析了酒店餐饮冷链物流系统的特征以及发展中存在的问题。酒店餐饮冷链物流体系可分为外部冷链物流体系和内部冷链物流体系。构建外部冷链物流体系,要注意集中采购模式、一体化运输配送、基础设施等方面的问题。构建内部冷链物流体系,要构建合理化的作用环节、精细化的作业流程以及标准化的作业动作。
This paper analyzed the characteristics of cold chain logistics of hotel catering and its problems. The cold chain logistics can be categorized into inside system and outside system. To construct outside cold chain logistics system, we have to focus on centered purchasing, integration transportation and infrastructure. To construct inside gold chain logistics system, we have focus on reasonable working linkage, fine processing and standardization.
