摘要 杂豆富含植物化学素,这些天然化学物质具有一定的生物活性,尤其在预防与营养相关的慢性疾病方面。现对多种杂豆的植物化学素进行综述,包括植物化学素的种类及其抗氧化、预防代谢综合症和预防癌症的效果等,旨在为杂豆的合理开发利用提供科学依据。 Legumes are rich in phytochemicals.Studies have indicated that some of these natural substances have great biological activities,especially in the prevention of chronic diseases.This paper reviewed phytochemicals from various legumes,including the categories,antioxidant abilities,and prevention of metabolic syndromes and cancers,to provide scientific basis for development and utilization of legumes.
