摘要
云南冬季气温低,茶树休眠,一般不采茶,茶树顶端的芽叶被人为修剪。但部分低海拔茶区的茶树冬季不休眠,仍然生长。为解决冬季红茶加工中因气温低、空气干燥对发酵不利的影响,通过对云南红茶加工工艺中的揉捻、发酵工艺环节作改进及试验,制作出品质较好的冬红茶产品。同时,对普洱市茶区中海拔在1 000 m以下、年平均气温在20℃以上的茶园面积作估测,估算出普洱市冬红茶的生产潜力。
Tea shoot is usually not picked in Winter as the low temperature, but some still keep growing in which the altitude is below 1 000 m. In processing of black tea picked in Winter, experiment was conduct to study the technology for good qualiy of black tea. Meanwhile, an estimation of production potential of Winter tea was assessed for plantations at altitude of below1 000 m, with an annual average temperature of 20℃ or more..
