摘要
食用油脂返色现象是植物油精炼后会经常遇到的问题。为了防止返色现象对产品外观质量的影响,给销售环节带来不必要的麻烦,对油脂返色的研究具有重要的科学意义和经济价值。本文对食用油脂返色的原因及影响因素进行了分析与探讨,并且阐述油脂返色机理。
The color reversion of edible oil happens easily after vegetable oil refining, which affects its appearance quality. The research of color reversion is of scientific importance and economic value, in order to prevent unnecessary trouble of the selling part. The reasons and influencing factors of color reversion in edible oil were analyzed and discussed, and then the mechanism of color reversion in oil was summarized.
