摘要 目的为了掌握呼和浩特市食品中铅、镉的污染状况,发现食品中的重金属安全隐患。方法按照随机抽样的方法在呼和浩特市所辖的9个旗县(区)采集490份食品样品,按照食品安全国家标准中规定的检验方法进行铅、镉的检测,并对监测结果进行统计分析。结果 2011-2013年呼和浩特市食品中铅、镉的检出率分别为18.78%与40.89%,铅无超标样品检出,镉的超标率为2.07%;生肉、茶叶与食用菌及其制品中重金属检出率较高;网店、商店与农贸市场食品中重金属的检出率较高。结论呼和浩特市食品中重金属污染水平较低,相关食品安全监管部门应加大对生肉、茶叶与食用菌及其制品的监管力度,网店食品的重金属污染问题也需重视。 Objective In order to master the contamination of lead and cadmium in food in Hohhot City and to find hidden trouble in food safety. Methods We collected 490 samples according to the random sampling method in 9 counties(area) in Hohhot. We detected lead and cadmium in accordance with the method in the national standard and analysed the results. Results The positive rate of lead and cadmium were 18.78% and 40.89% respectively and no samples in which lead exceed the standard, meanwhile exceeding standard rate of cadmium was 2.07%. The heavy metal positive rates of raw meat, tea and edible fung were high.The positive rates of heavy metal in food form online shops, physical stores and farmer's market were high. Conclusion The heavy metal pollution level of food in Hohhot was low. The relevant food safety supervision departments should strengthen supervision on the raw meat, tea, edible fungus. We should focus on heavy metal pollution in food from online shops also.
