摘要
微生物酵素是各种生物化学反应的催化剂,对人体具有重要作用。阐述酵素的概念与功效,介绍酵素在食品工业中的应用情况,分析酵素产品今后的发展前景,以期为酵素的进一步研究开发与应用提供一定的理论依据。
Microbe ferment is a catalyst of various organisms chemical reaction, it has important functions to human body. In the article, it expounded the concept and functions of ferment, introduced the application status of ferment in food industry, and analyzed the prospect of ferment products in the future, in order to provide a certain theoretical basis for further development and application of ferment.
