摘要
该文介绍了地沟油鉴别方法及准确性。地沟油原料来源复杂,在可控成本的精炼过程中,许多有害成分或外源成分难以除去,必然残留在地沟油中,使地沟油的感官性状、物理性状,组成成分与合格原料生产油脂有很大的区别。采用合格原料性油脂与地沟油的组分比较和油脂中基因检测是鉴别地沟油的重要方法。
This paper described themethodsof identificationof wasteoil and ther accuracy.The componentsof wasteoil from rawmaterials sources werecomplex. During thecostingcontrolled refining process,it was difficult to be removed.Thereforemanyharmful ingredientsor exogenous components would remain in the wasteoil.So sensory properties, physical properties andcomponentsof wasteoil were different from qualifiedoil.They were the importantmethodsof identificationof waste oil bycomparingcomponents with qualified rawoils and testing genes.
