摘要
大豆是我国主要的油料作物之一,大豆中的蛋白含量高达40%,而且是优质的植物性蛋白质。目前,工业生产中大豆蛋白质提取率偏低,因此提高大豆蛋白提取率是充分利用大豆副产物资源和拓展大豆工业新用途急需解决的问题。通过不同温度、不同p H、不同料液比等条件下对大豆蛋白提取率做了研究,通过正交实验获得大豆蛋白的最佳提取工艺参数,为大豆蛋白工业生产提供有益的参考。
Soybean is one of the main oil crops in China. The protein of soybean is a good plant protein, while the contents of protein are 40% in soybean. At present, the extraction rate of soybean protein is low in indus- trial production. The problem is urgent to solve about the soybean protein extraction rate in order to the full use of the resources and the development of soybean by - products. In this paper, the extraction rate of soybean protein was studied in different temperature, pH and ratio of material to liquid. The optimum extraction parameters were obtained on soybean protein by orthogonal experiment.
