摘要
文章从食品安全保障体系的整体视角出发,顺应社会和经济发展的新时期要求,紧密结合企业和行业人才需求,深入食品企业进行调研,使用定性、定量分析相结合的方法,对食品安全类专业的典型工作过程和工作岗位进行分析,对岗位核心任务模块进行定位和分类研究,重构基于食品链全过程的食品安全类专业的核心课程体系,从而培养具备从整个食品链的各个环节进行食品安全控制的新型实用型人才。
In the paper, conforming to the requirement of social and economic development in the new era, a research of the demand for business and industry professionals was conducted in food companies from the overall perspective of the food security system point of view. A typical work processes and post of food security specialized subjects are analyzed by qualitative and quantitative analysis methods, and core mission module of work processes are positioned and classified. Based on the whole process of the food chain, the corn curriculum system of the processes of food safety is reconstructed, so that the new practical talents are trained with food safety control skill of the whole food chain.
