摘要
主题宴会台面的设计与制作,既考察选手的知识、文化积淀,又检阅其技能、规范的速度与质量,在酒店经营中更具有凸显主人身份的放大效应。主题宴会台面的设计与制作,首先要善于开发选定主题,接着要提炼文化主线,继而组织道具、全面表现主题,通过规范操作主题台面呈现之后还应该回顾、检点主题效果,以期完善。
Table design and set are not only a test of the contestants' professional knowledge, cultural under- standings, skills, speed and service quality, but also represent the social status of the host in hotel management. Table design and set for theme banquets should start with a study of the theme to clarify the cultural mainstream, which is then followed by tableware organization to highlight the theme. Standardized operational procedures to represent the theme should be concluded with a review and reflection.
