摘要
目的利用品红-亚硫酸法测定自酿五味子酒及其发酵果渣中甲醇的含量,并对其进行安全性评价。方法采用国家标准GB/T 5009.48—2003蒸馏酒及配制酒卫生标准的分析方法中关于甲醇含量检测的品红-亚硫酸法进行检测,对自酿五味子酒及其发酵果渣样品进行测定。结果自酿五味子酒甲醇含量为0.05 g/100 m L,符合国家标准中规定的0.2 g/100 m L,五味子发酵果渣中甲醇含量为0.48 g/100 g,相对较高。结论自酿五味子酒甲醇含量未超过国家标准规定的限度,饮用自酿五味子酒不存在健康风险。实验所得数据可为今后五味子酒及其发酵果渣产品的开发和进一步研究提供参考依据。
Objective To measure methanol content in schisandra wine and fermentation of pomace by magenta-sul-fite method,and assess its safety. Methods To test methanol by magenta-sulfite method according to the GB/T 5009 . 48—2003 about liquor and compound wine and measure the sample of Schisandra wine and Fermentation of pomace. Results Methanol content of Schisandra winewas0. 05 g/100 mL,which meet thestandard of 0. 2 g/100 mL,and methanol content of Schisandrafermented pomace ishigh(0. 48 g/100 g). Conclusion The methanol con-tent does not exceed standard limitation,and no health hazard fordrinking Schisandra wine. Experimentdatacould pro-vides reference for the development of schisandra wine and fermentation of pomace.
