摘要
介绍了控制图的基本概念及其在食品微生物检测方面的应用,并以控制图在压缩干粮生产过程中对菌落总数进行监控的应用为例说明控制图的作用。试验结果表明,控制图可以合理的运用在食品生产过程中,控制并保证食品生产质量。
This paper introduces the basic concept of control chart, the application in food microbiological detection, and the control chart in the compression ration production process to monitor the total number of colonies is as an example to illustrate the benefits of control charts.The experimental results show that the control chart can be used reasonably in the process of food production to control and guarantee the quality of food production.
