摘要 为探明梵净山野生百合各营养成分含量,为开发利用梵净山野生百合植物资源提供理论依据,按照国家标准食品理化分析方法对梵净山野生百合成熟鳞茎的多种营养成分进行测定分析。结果表明:梵净山野生百合中水分含量为66.9%,灰分含量为6.3g/kg,蛋白质含量为26.63g/kg,粗脂肪含量为5g/kg,粗纤维含量为7g/kg,维生素C含量为0.3g/kg。矿质营养元素含量为:钙156.3mg/kg,钾2 653.5mg/kg,镁62.3 mg/kg,铁21.4 mg/kg,锌172 mg/kg,铜5.0 mg/kg,锰14.8mg/kg,硒<0.05mg/kg。含有16种氨基酸,包括6种人体必需氨基酸。结论:梵净山野生百合鳞茎富含各类营养元素,其锌元素含量明显高于普通蔬菜,属营养全面且富含锌元素的野生植物资源,具有很大的开发潜力。 To ascertain the content of nutrition of the Fanjing Mountain wild lily and provide a theoretical basis for development and utilization of Fanjing Mountain wild lily, The authors mainly determined and analyzed the nutritional components of the mature bulb of Fanjing Mountain wild Lily by using the national standard of food physicochemical analysis method. Results: Moisture content of Fanjing Mountain wild lily is 66.9%, ash content is 6.3 g/kg, protein content is 26.63g/kg,crude fat content is 5 g/kg,crude fiber content is 7 g/kg and vitamin C content is 0. 3 g/kg. Mineral nutrient elements: potassium is 2 653.5 mg/kg,calcium is 156.3 mg/kg, magnesium is 62.3 mg/kg,iron is 21.4 mg/kg,zinc is 172 mk/kg, copper is 5.0 mg/kg,manganese is 14.8 mg/kg, Se is d0.05 mg/kg. And there are 16 different kinds of amino acids,including six different kinds of essential amino acids. The Fanjing Mountain wild lily bulb contains all kinds of nutrient elements, the content of zinc is significantly higher than that of ordinary vegetables. In conclusion. Fanjing Mountain wild lily has comprehensive nutrition and rich zinc element and it has great development potential.
