摘要
目的了解咸阳市市售食品中食源性致病菌的污染状况,为食品风险监测提供理论支持,降低食品安全事故发生几率。方法按照陕西省疾病预防控制中心制定的《2014年陕西省食品微生物及其致病因子监测工作手册》中规定的检测程序和方法进行采样和检测。结果 2014年共采集7类224份样品,检出食源性致病菌12株,总检出率为5.36%。其中金黄色葡萄球菌4株,铜绿假单胞菌4株,蜡样芽胞杆菌3株,单增李斯特菌1株。直饮水、巴氏杀菌乳、外卖配送餐和学生餐等污染较为严重。结论咸阳地区市售食品存在一定的安全隐患。食品监管部门应加强从业人员的监管和卫生宣教,加强监管,改善食品生产、流通等各个环节的卫生,确保食品安全。
Objective To investigate the contaminating characteristics of food- borne- disease pathogenic bacteria in food from Xianyang city,provide theoretical support for food risk monitoring and reduce the risks of food safety accidents. Methods The food- borne- disease pathogenic bacteria were tested the biochemical and serotype according to Shanxi Food borne Pathogenic Bacteria Monitoring Manual of 2014. Results A total of 7categories 224 samples were sampled in 2014,12 strains of pathogenic bacteria were found,the total positive rate was 5. 36%,among which there were 4 strains of Staphylococcus aureus,4 strains of pseudomonas aeruginosa,3 strains of Bacillus cereus,and 1 strain of Listeria monocytogenes. Direct drinking water,pasteurized milk,food distribution and students' meal pollution are more serious. Conclusions The food in Xianyang markets is contaminated by food- borne pathogens,food regulators should strengthen the personnel supervision and health education,strengthen supervision,improve health of each link such as food production,circulation and so on,to ensure food safety.
