摘要
植物甾醇是一类具有降血脂功能的天然活性成分,因其具有不溶于水、油溶性低等特点,极大地限制了它的实际应用。通过对植物甾醇进行改性,可以有效改善其溶解性,提高其生物利用率。植物甾醇的改性研究主要分3个部分,即改善其油溶性、水溶性及其他改性。对国内外近十年来关于植物甾醇的改性研究进展进行综述,重点介绍了离子液体催化合成植物甾醇酯以及改善植物甾醇水溶性的研究进展,并展望了未来的研究方向。
Phytosterols are a kind of naturally active ingredients with hypolipidemic function. However, phytosterols have characteristics of insolubility in water and low solubility in oil, which greatly restricts their practical application. The modification of phytosterols will effectively improve the solubility and in- crease the bioavailability. The modification research of phytosterols mainly includes three aspects, im- provement of oil solubility and water solubility and other modifications. The research progresses of the modification of phytosterols at home and abroad in recent ten years were summarized, the research pro- gresses of ionic liquid - catalyzed synthesis of phytosterol esters and improvement of water solubility were focused on, and the research direction in the future was prospected.
