黄姜色素理化性质的研究

摘要 研究了大孔树脂纯化后的黄姜色素的颜色反应、溶解性以及pH、温度、光照、金属离子、氧化剂和还原剂对该色素稳定性的影响。结果表明:黄姜色素具有黄酮类的颜色反应特性,其易溶于甲醇、乙酸、乙醇和水,微溶于正丁醇,不溶于乙醚、乙酸乙酯和石油醚等脂溶性溶剂;其对碱性环境比较稳定,酸性环境变化较大,50℃以下较稳定,高温易变质,对自然光和紫外光稳定;Fe2+,Cu2+,Al 3+,Na+,Mg2+,Zn2+,Ca2+,Mn2+等8种金属离子及还原剂Na2SO3均导致黄姜色素溶液吸光度下降,氧化剂H2O2对黄姜色素有一定的增色作用。 The color reaction and solubility of yellow pigment from Dioscorea zingiberensis purified by macroporous resin XDA-7 and the effect of pH,temperature,light,metal ions,oxidizing and reducing agents on the stability of the pigment are studied.The results show that the yellow pigment is soluble in methanol,acetic acid,ethanol and water,slightly soluble in n-butanol,insoluble in ether,ethyl acetate and petroleum ether and other lipid-soluble solvent,which has color reaction characteristic of flavonoids;it is relatively stable in alkaline environment and has a significant change in the acidic environment;it is stable below 50 ℃ or under natural light and UV and changes in high temperature;8 kinds of metal ions including Fe^2+,Cu^2+,Al^3+,Na^+,Mg^2+,Zn^2+,Ca^2+ and Mn2+and reducing agent Na2 SO3 all lead to a decrease in absorbance of yellow pigment,oxidant H2 O2 has a certain hyperchromic effect to the pigment.
