摘要
菌落总数是评价食品卫生质量、污染程度以及安全性最常用的指标之一,具有重要的卫生学意义。北方酸菜菌落总数检测结果的可靠性和准确性会直接影响检测人员对酸菜的品质进行安全性评价以及对货架期的预测。然而,在实际检测酸菜菌落总数过程中,其检测结果往往不能真实地反映出菌落总数水平。因此,对北方酸菜实际检测过程中存在的问题进行了分析与探讨,并提出了相应的控制措施。
The total number of colonies is one of the most commonly used indicators to evaluate the quality of food hygiene,polluted degree and safety.The reliability and accuracy of test results of the total number of colonies in sauerkraut of northern China will directly impact the inspectors on the safety evaluation of quality of sauerkraut and prediction of shelf life.However,in the actual testing process of the total number of colonies in sauerkraut,the test results often can not reflect the true level of the total number of colonies.In this paper,the actual problems in the testing process are discussed,and the corresponding improvements are proposed.
