摘要 随着国家及民众对食品安全重视程度的提升,小麦粉安全卫生品质已经成为我国面粉行业当下和未来转型的侧重点,转型离不开技术的推动,现阶段面粉行业出现的如色选机、轻度剥皮技术、真空润麦、动态润麦、臭氧润麦、表面不锈钢设备以及HACCP食品安全保障体系等,都对我国的小麦粉安全生产具有深远的影响。继续开发、创新和利用这些新技术、新设备必将使我国小麦粉安全卫生品质上一个大的台阶。 Along with more importance being attached to food security by the public, wheat flour safety has been the focus of the current and future transformation of the flour industry in China. The transformation cannot be separated with the promo- tion of technology. Many technologies which were applied to the practice have made great importance on flour safety, for exam- ple, colour sortor, mild peeling technology, vacuum tempering, dynamic tempering, ozone tempering, the equipment which surfaces are stainless steel and HACCP system. With the development of exploiting and innovating these new technologies and new equipments, the wheat flour safety could reach a higher level in China.
