摘要
水生蔬菜包括莲藕、茭白、慈姑等10余种水生植物,据中医药典记载水生蔬菜大多为药食同源植物。对近年来水生蔬菜的营养成分及药用价值相关研究进展进行了综述,以促进人们对水生蔬菜价值的了解,并为水生蔬菜产品的综合开发利用提供参考。
Aquatic vegetable includes more than 10 kinds of aquatic plants, such as lotus root, Zizania latifolia,arrowhead, etc. According to Traditional Chinese Pharmacopoeia, aquatic vegetable was recorded as a plant suited for both food and medicine. Studies on nutritional and medicinal value of aquatic vegetables in recent years had been summarized to promote the understanding of the value of aquatic vegetables, and provide a reference for the comprehensive development and utilization of aquatic products.
