臭氧处理对双孢菇采后生理和贮藏品质的影响 被引量:15

摘要 为探讨双孢菇采后贮运保鲜新技术,以新鲜双孢菇为原材料,0℃条件下采用不同浓度臭氧处理保鲜双孢菇。结果表明:与对照相比,臭氧对双孢菇的保鲜效果明显。适宜浓度臭氧能有效抑制双孢菇呼吸强度,延缓衰老,减小褐变程度。且经臭氧处理的双孢菇子实体的硬度保持较好,并且钝化过氧化物酶活性,蛋白质含量较高。从整体品质上看,6.432 mg/m3浓度臭氧处理效果要优于2.144 mg/m3臭氧处理效果。 In order to study the Agaricus bisporus postharvest storage and preservation of new technology, with fresh Agaricus bisporus as raw material, under 0 ℃ by different concentrations of ozone fresh-keeping Agaricus bisporus. The results showed that: compared with the control, ozone had obvious effect on the fresh keeping effect of the double spore mushroom. Appropriate concentration of ozone could effectively inhibit the respiratory intensity of the double spore mushroom, delay aging and reduce the degree of browning. And the hardness of the double spore mushroom with ozone treatment was good, and the activity of the peroxidase was also the content of protein was higher. From the overall quality of the 6.432 mg/m^3 ozone treatment effect to be better than 2.144 mg/m^3 ozone treatment effect.
