摘要
主要研究了以药食两用的食材开发的高原有机餐包的营养特性和功能特性。通过体外消化试验研究了高原有机餐包的血糖生产指数(GI),分别采用还原Fe^(3+)、邻苯三酚自氧化法、H_2O_2法和1,1二苯基2三硝基苯肼(DPPH)法测定了有机餐包的总还原力、O^-_2·抑制率、·OH的清除率和DPPH·的抑制率,并且通过细胞模型考察了其抗癌作用。实验表明该餐包属于中GI食品,并且具有一定的抗氧化能力,同时具有抗癌疗效,能够抑制肝癌细胞Hep G2的生长,通过细胞周期观察,主要阻滞在S期以及G2/M期的细胞分裂。综上可见,该餐包具有很好的功能效果。
This paper mainly studied the nutrition and function of a new developed meal by mixing plateau organic material which has food and drug bi-functions. Glycemic index (GI) of the meal is determined by in vitro digestion. The inhibition ratio to DPPH · , - OH clearance, inhibition ratio to O2^- · and total reduction ability of the meal were determined by DPPH, H2O2, pyrogallol autoxidation and reduction of Fe^3+ experiment , respectively. Meanwhile, the effect of anti-cancer is investigated through the cell biology. The results showed that, the meal is medium glycemic index food and it has some antioxidant capacity and anti-cancer effect. It can inhibit the growth of Hep-G2 cells in the period of S phase and G2/M phase. In conclusion, the new meal has good functions.
