海藻糖对蛋白质的抗逆保护及其在食品领域中的应用 被引量:9

摘要 海藻糖是一种安全、稳定的天然二糖,存在于许多可食用动植物及微生物体内。海藻糖最令人称奇的生物学功能就是抗逆保护作用,可以很好地保护生物活性物质在逆行环境中的稳定性。针对海藻糖对蛋白质在逆性环境的稳定作用、作用机制方面的最新研究,及在食品领域中最新应用研究进行了阐述。 Trehalose is safe and stable disaccharides existing in many edible plants, animals, and micro- organisms. The most surprising biological functions of trehalose is stress resistance in organisms, it coutd w ell protect the stability of bioactive substances in rugged environment.This paper reviewed the newest rese arch and application on the stable function and mechanism of trehalose on proteins in rugged environ-ment.
