摘要
红曲酒是一种十分重要的保健酒。对红曲酒中红曲色素的稳定性进行了研究,以紫外、自然光照、瓶子颜色、温度等因素为研究对象,使用紫外分光光度计测定红曲酒的吸光度并计算保存率。结果表明,紫外照射160rain后红曲酒吸光度保存率为91.5%;自然光下储存120d吸光度保存率仅为24%,而避光保存组吸光度保存率为70%。绿色瓶子最有利于红曲酒中色素保存,在太阳光照射下7h后绿色瓶中的红曲酒吸光度保存率为74.2%,而无色瓶仅为50%;温度对红曲酒中红曲色素影响不大,4℃和室温(20~30℃)下保存4个月的红曲酒颜色和吸光度保存率相差不大,煎酒温度和时间条件下红曲酒中色素吸光度基本没有变化。
Red starter liquor is an important health care wine. The stability of red pigment of red starter liquor is researched according to the actual situation in the paper, with UV, light, color of bottle and temperature as the research objects, calculating absorbance and survival rate of red starter liquor by using a spectrophotometer. The results showed that after ultraviolet irradiation 160 min absorbance of red starter liquor save 91.5%. The survival rate is 24% after exposure to natural light for 120 d, while dark group was 70%. And green bottle is most conducive to the preservation of pigment in red starter liquor, its save rate was 74.2% under sunlight 7 h, the colorless bottle only 50% relatively. Temperature has no effect on the stability of the pigment, the survival rate have no difference between 4 ~ and room temperature(20-30 ℃). For absorbance there is no change under the fried wine conditions.
