摘要
豆渣是一种营养价值较高的农产品加工副产物。豆渣中富含膳食纤维、蛋白质、异黄酮、卵磷脂、大豆多糖等成分,因此被广泛应用于食品、医药、化学、工业等行业。但豆渣不耐贮存,极易腐败,需要进行干燥处理。目前已经进行研究的干燥方式有:气流干燥、真空干燥、微波干燥、电场干燥、联合干燥等,主要阐述豆渣干燥技术的研究和应用进展,以期为豆渣的生产应用提供技术支持和理论指导。
Okara is a kind of by-product of bean products, which has a good quantity of nutritional value, such as DF, protein, isoflavone, lecithin, soybean polysaecharide and so on. Okara is widely used in aspects of foods, drugs, chemistry and industry. Okara is easy to rotten, so drying technology is necessary. Drying technology which have been studied include flash drying, vacuum drying, microwave drying, electric field drying and combined drying. The drying technology of okara and the application progress were elaborated, aiming to provide technology supports and theory guidance for okara' s production and application.
