摘要 为探讨MS活性多糖对细菌生长及生物学特性的影响,选择嗜酸乳杆菌、枯草杆菌、大肠杆菌和金黄色葡萄球菌作为受试菌种,进行MS糖对细菌生长增殖影响试验、耐酸碱性试验和耐温性试验。结果表明:MS活性多糖对嗜酸乳杆菌、大肠杆菌和金黄色葡萄球菌具有促进增菌效果,其最适添加量分别为3%、3%和0.3%;而对枯草杆菌具有抑制作用,且MS对细菌耐酸及耐热性有提高作用。 In order to research the effects of MS active polysaccharide on bacterial growth and biological activity,Lactobacillus acidophilus,Bacillus subtilis,Escherichia coli and Staphylococcus aureus were selected as the test species,the bacterial growth proliferation experiment,the acid-alkali tolerance test and the thermal tolerance test were proceeded.The results showed that MS active polysaccharide promoted the proliferation of Lactobacillus acidophilus,Escherichia coli and Staphylococcus aureus,the optimum adding amounts were 3%,3%and 0.3%,respectively.MS active polysaccharide inhibited Bacillus subtilis growth,and improved bacteial resistance to acid-alkali and heat resistance.
