水产鱼中致病性弧菌的主动监测及危险分析 被引量:7

Active monitoring and risk analysis of pathogenic vibrio in aquaculture fish

摘要 目的了解本市水产鱼中致病性弧菌(副溶血性弧菌、创伤弧菌、溶藻弧菌)的污染状况及危险性,为水产鱼消费安全及预警提供科学依据。方法根据GB 4789.7—2013《食品微生物学检验副血性弧菌检验》中的方法,进行淡水动物性水产品养殖和销售加工过程专项监测。结果水产鱼中致病性弧菌阳性率为52.5%,其中海水鱼阳性率为68.8%,淡水鱼阳性率为47.1%,2种水产品中均以副溶血性弧菌的阳性率最高,其次为溶藻弧菌、创伤弧菌。结论水产鱼中致病性弧菌污染严重,淡水鱼也同样存在较大污染,且以副溶血性弧菌污染最为严重,应引起高度重视。 Objective To understand the pollution and danger status caused by pathogenic vibrio( Vibrio parahemolyticus,Vibrio vulnificus,Vibrio alginolyticus) in aquatic fish,so as to provide a scientific basis for the safety and warning of aquaculture fish consumption. Methods According to GB 4789. 7—2013 Food Microbiology Inspection Vice Hemorrhagic Vibrio,the special monitoring programme for freshwater animal breeding and sales process was made and performed. Results The positive rate of pathogenic vibrio in aquatic fish was 52. 5%,among which the positive rate of ocean fish was 68. 8%,that of freshwater fish was 47. 1%,2 kinds of aquatic products were with the highest positive rate of Vibrio parahemolyticus,and followed by Vibrio vulnificus and Vibrio alginolyticus. Conclusion Aquaculture fish is severely polluted by pathogenic vibrio,freshwater fish is also having a severe pollution which is severely polluted by Vibrio parahemolyticus. We should pay great attention to them.
