摘要
餐饮"老字号"凝聚着我国传统的商业文化、饮食文化和独特技艺,是餐饮业民族品牌的代表。然而,在现代经济社会中,"老字号"企业却面临着严峻的挑战与发展的困境,为此对这些企业的研究就显得尤为重要。文章通过对近10年来有关餐饮"老字号"研究文献的回顾与分析,从餐饮老字号企业的经营状况与发展对策、品牌管理、企业营销、消费者市场、企业视觉形象等方面,对"老字号"餐饮企业研究内容进行了述评,最后,指出了现有研究工作中的不足之处,并对未来研究方向提出了建议,以期为餐饮"老字号"的相关研究提供借鉴与启示。
The time-honored catering enterprises contain the traditional commercial culture, catering cuhure and unique techniques of China.However,these enterprises are faced with severe challenges and difficulties in development in modem society.Therefore it's particularly important for the academic circle to make a study on these enterprises.Through the searching of literatures on time-honored catering enterprises, this paper reviewed the literatures in terms of the enterprises' operation state and development ,brand management, marketing, consumers' markets and visual image.Finally this paper ended with the problems in the current research and some suggestions for future research in hope of providing relevant references and enlightenment about time-honored catering enterprises.
