摘要
本试验对以蛹虫草为主要原料的蜂蜜虫草饮料的生产工艺条件进行探讨。采用单因素与响应面法,优化虫草浸提条件与产品配方。结果表明:虫草粉在89.73℃条件下,浸提比为浸提质量比为1∶70.29,浸提50.07 min,经过离心、过滤得到虫草浸提液,以蜂蜜添加量3.59%、白砂糖添加量7.41%、柠檬酸添加量0.05%的配方制备,得到甜酸可口,营养丰富的蜂蜜虫草饮料。
The process condition of Cordyceps militaris drink with honey was discussed, which the main raw material was Cordyceps militaris. The extract condition and fomula design were optimized by single factor and respone surface method. The results showed: Cordyceps militaris under the condition of 89.92 ℃, ratio of extraction 70.04, time 50.09 min, extraction solution were centrifugalized and filtered, the fomula was honey 3.59%, sugar 7.41%, citric acid 0.05%,the drink was prepared of sweet and tasty , nutritious.
