摘要 文章运用TA-XT2i质构仪对常温下的苹果进行加载-卸载的流变特性试验,分析压缩斜率、弹性度、滞后损失的变化趋势以及硬度的变化规律.结果表明:货架期间三个流变参数都呈下降趋势,果实的硬度和弹性在货架期间逐渐下降;连续测试对苹果产生了一定的影响,且此影响在测试后期逐渐明显;用三次多项式模型对压缩斜率的变化曲线进行拟合,拟合度高达0.997,此模型可以用来预测苹果果实在货架期间的硬度的变化.该试验研究为苹果质构品质的快速检测提供参考. In this study, the texture analyzer of TA-XT2i was used to test the property of loading-unloading apples during the shelf life. The variation trends of compression slope, elasticity degree and hysteresis loss as well as the variation law of firmness were then analyzed. It was concluded that all the three rheological parameters decreased during the whole shelf life, and the firmness and the elasticity were effect on intact apples, which aggravated with the tests added. The gradually decreasing. Continual tests had some variation curves of compression slope could be fitted by the cubic polynomial model, with the fit degree as 0.997, and the model could be used to predict the firm- ness variation of apples during their shelf life. The research made some foundations for apple's quick quality inspection.
