摘要
核桃蛋白是一种良好的蛋白资源,其营养价值与动物蛋白相近.综述了国内外核桃蛋白提取工艺及其含量测定方法,通过比较分析展望了核桃蛋白提取工艺及其含量测定方法的发展趋势,为今后核桃蛋白的开发和利用提供参考.
Walnut protein was a good protein resource, its nutritional value is similar to animal protein. This paper was mainly studied on the domestic and foreign distill technics for walnut protein. Looking forward to the development trend of extraction process and content determination of walnut protein through the comparison and analysis, provide a reference for the future development and utilization of walnut protein.
