摘要
《园艺产品加工学》是食品科学专业一门应用性极强的主干课程,主要任务是探讨食品资源利用、原辅材料选择、保藏、加工、包装、运输以及上述因素对食品质量、货架寿命、营养价值和安全性等方面的影响。其单元操作种类繁多,内容相对分散,学生完全掌握有一定的难度。该文采用思维导图构建课程知识网络,可化繁为简,突出各单元操作在园艺产品加工中的作用,并将各知识点横向联系比较,引导学生积极思考并主动归纳总结提炼,从而为知识的灵活应用奠定基础,显著提高教学效果。
Horticultural Products Processing is a professional course of food science.The main task is to investigate the use of food resources,raw material selection, preservation,the impact of processing,packaging,transportation,and these factors on food quality,shelf life,nutritional value and safety aspects.It is difficult to master because of the various of unit operations and dispersion of contents.In this article, the mind map was used to build the knowledge network of the course on order to simplify the knowledge points,and emphasize the importants of each unit operation on whole horticultural products processing.The teaching practice can guide students to think actively and initiatively refining summarized,and lay the foundation for the knowledge flexible application. The effect of teaching was significantly improved by the construction of knowledge network.
