摘要
目的对即食凉拌食品的微生物污染状况进行调查分析,为即食凉拌食品制定出可靠的微生物限量标准。方法采用《中华人民共和国国家标准食品卫生微生物学检验方法》以及国家食源性疾病监测网等作为监测方案,2014年5—9月份曲靖市管辖区部分饭店超市的即食凉拌食品中微生物污染情况进行检测。主要检测项目包括大肠菌群、酵母菌、金黄色葡萄球菌、志贺菌、沙门菌、溶血性链球菌、致泻性大肠埃希菌、单增李斯特菌以及菌落总数。结果进行检查的31家零售加工单位加工生产的80份即食凉拌品样品中未出现目标致病菌的检出。检测过程中大肠菌群的阳性率约为72.25%,为主要污染菌。结论在即食凉拌菜中大肠菌群为主要的污染菌群,对于该类菌群的限量国家应尽快尽快出台安全卫生标准,建议即食凉拌食品中大肠菌群限量应低于100 MPN/g。
