摘要
朝鲜蓟是菊科菜蓟属多年生草本植物,内含多酚类化合物(如黄酮类化合物、菊粉以及天门冬酰胺等物质),是一种具有高营养的保健蔬菜。将朝鲜蓟叶片分别用不同体积分数、不同p H值、不同料液比的乙醇浸泡,用超声波法提取其中的多酚,研究朝鲜蓟叶片中多酚提取的最佳工艺条件。采用Excel 2007软件和正交设计助手进行数据分析,结果表明各因素对多酚提取率的显著性顺序为p H值>乙醇体积分数>料液比,多酚提取的最佳条件为乙醇体积分数75%,p H值6,料液比1∶15/1∶15,提取率为12.93 mg/m L。
Artichoke belonging to the family of asteraceae,which is a high-nutrition vegetable containing phenolic compounds such as flavonoids,inulin,asparaginase and other substances. This paper research extraction method of polyphenols in the leaves of the dry artichoke, identifies the optimum extraction conditions. Artichoke dry leaves with different alcohol concentration,different p H,different volume of ethanol soak,then use ultrasonic extraction. The Excel 2007 software and orthogonal design assistant help show the results that the affection degree of various factors on the extraction ratio of polyphenolthe is:p H alcohol concentration ratio of solid to liquid, the optimal processing conditions of leaching dry artichoke polyphenol are 75% ethanol as solvent extraction,p H is 6,ratio of solid to liquid 1∶15 / 1∶15,the extraction ratio of polyphenolthe is 12.93 mg/m L.
