摘要
我国的苦荞资源丰富。苦荞芽菜不仅营养丰富、保健功能性强,而且还克服了苦荞种子难加工、抗营养因子较多的特性,是一种具有广阔开发与应用前景的新型食材。对我国苦荞芽菜萌发和生产技术,以及利用苦荞芽菜研制与开发出的多种优质食品进行了综述,为苦荞芽菜的进一步开发和利用提供参考与思路。
Resources of tartary buckwheat are abundant in China. As a new foodstuff,the buckwheat sprouts is nutritional and functional but also overcome poor processing characteristics and anti-nutritional properties,which have a broad development and application prospects. The article reviewed the buckwheat sprouts germination and production technology,and a variety of high quality food that researched and developed with it,to offer scientific reference of further development and utilization.
