摘要 通过综述可以应用于果蔬汁浓缩的膜浓缩技术、界面渐进冷冻浓缩技术、分子蒸馏浓缩技术及常温真空浓缩技术的原理和特点,分析了这些浓缩新技术在果蔬汁浓缩领域的应用情况,以期为果蔬汁浓缩新技术的开发应用提供借鉴和参考。 This study focuses on the technical principles and features about membrane enrichment, progressive , molecular distillation and normal vacuum concentration, analyzes the situation of these new concentration technologies application for fruit and vegetable juice concentration areas, which provides reference for development and application of new concentration technologies.
